Paleo Egg Muffins

Paleo Egg muffins ~ You can add any combination of veggies, meat and cheese!

6 eggs
Veggies of choice, ie onion, spinach, shredded carrot, mushrooms, chopped
Herb of choice: thyme, oregano, basil, sage
Meat of choice: sausage, ground chicken or turkey, bacon
coconut oil or olive oil
Cheese optional, parmesan, fontina, gruyere

1. Preheat oven to 350 degrees
2. Chop onions, garlic, mushrooms and saute on stovetop in coconut or olive oil; add ground chicken or turkey. Pre cook bacon in oven separately. 
3. Crack eggs into a bowl; Mix ingredients from stove top with eggs and add fresh herbs, meat from above, and chopped raw spinach/shredded carrot. Mix well. 
4. Pour into muffin tins and bake at 350 for 15-18minutes or until cooked through
