Paleo zucchini fries ~ They're so good that you almost think you're eating actual fries! Takes a little time but make a ton and refrigerate, its worth it!
Ingredients: 2-3 zucchini, washed and sliced into 1/4 in dimes 2 eggs olive oil 1 cup almond flour 1 T fresh rosemary, pulled off the stalk and chopped fine 1 T fresh thyme, pulled of the stalk and chopped fine 1 tsp sea salt 1 tsp pepper
Directions: 1. Preheat oven to 425. Line 2 baking sheets with parchment paper 2. Prepare zucchini, wash and slice it. Break eggs into a bowl and scramble. Add a T of olive oil and mix well. 3. Combine almond flour, herbs, salt and pepper in a bowl 4. Dredge each slice of zucchini in egg and then almond flour mixture and then place on the cookie sheet. Allow 1/2 inch or so between slices. Once full, place in oven. 5. Cook zucchini for 10-15 minutes or until slightly browned. Take cookie sheet out of oven and turn each slice over. Return to the oven and bake for an additional 10 minutes or until brown. Allow to cook before eating. * Be sure to use oven to reheat!
