Power Balls for quick energy

Power balls ~ 

1 c. desiccated unsweetened coconut plus more for finishing
1 c. cashews
1 T peanut, almond or sunflower seed butter
1 T maple syrup
1 T raw honey

Blend all ingredients in a food processor or Vitamix until well blended. Form into 1 inch balls and place on a cookie sheet covered with parchment paper. Refrigerate cookie sheet for 2 hours or until hardened. Roll in desiccated coconut; can also roll in slivered almonds or other crushed nuts
