Stuffed sweet potatoes ~ Huge crowd pleaser!
4 large sweet potatoes
1 pound of spicy sausage
Guacamole made from 1-2 avocados
1 container of creme fraiche
Juice from 1 lime
paprika for finishing
Cilantro, chopped for finishing
Shredded jack (optional)
sea salt to taste
Preheat oven at 400. Place sweet potatoes on cookie sheet and bake for 30 minutes or until very soft when pierced with a fork. Set aside to cool. Meanwhile, cook sausage in oven or on stovetop until fully cooked, or if using fully cooked sausage, cut into diced pieces. Mix sausage with guacamole in a bowl. Once sweet potatoes are cool, slice lengthwise and scoop out some of the inside so that there is room for filling. Scoop the sausage and guac mixture into each potato so that it is slightly heaping. Top each sweet potato with a dollop of creme fraiche, drizzle fresh lime juice over each one, and finish with a sprinkle of paprika, chopped cilantro, and sea salt. Amazing...
