Super Easy Lunch Bowls

Ingredients: You can sub anything for the ingredients!


Roasted chicken breast, seasoned and cubed
Baked sweet potato, cubed
Avocado, diced
Red bell pepper, diced
1/4 cup walnuts, raw or toasted
Sprouts
Pea shoots
Sesame seeds for sprinkling

Tahini Dressing: *disclaimer: I can't give exact amounts. I am Lebanese you know, so we don't measure these things!
Tahini
Juice from 1-2 lemons
water
sea salt
raw garlic, minced
Blend in food processor until smooth; top with paprika and cayenne

Directions:
1. Prepare and bake chicken and sweet potato in a preheated 375 degree oven. I like to cube the sweet potato first, place on cookie sheet with coconut oil and bake for 20-25 minutes or until very soft. Chicken is seasoned and then roasted whole until cooked through and slightly crispy, and then cut when cooled.
2. While chicken and sweet potato are cooking, cut avocado and red bell pepper.
3. Arrange each ingredient in a bowl as desired. Top with sprouts, pea shoots and then sesame seeds. Drizzle tahini dressing on top.
